Swedish Pancakes

These can actually be made in an authentic Swedish Pancake pan or on a cast iron skillet or griddle.

A Bear, Hippo and Bison

I found this recipe in one of my favorite Cast Iron cookbooks, “Cast Iron Skillet Cookbook” by Sharon Kramis and Julie Kramis Hearne. I really recommend this excellent cookbook. I always have to adapt dairy in recipes, but I kept to the basic recipe.


  • 3 eggs, separated
  • 2 cups coconut milk
  • 1/8 tsp salt
  • 1 cup flour
  • 2 Tbsp butter, melted


  1. Beat the ingredients (minus the egg whites) in a large bowl. Then using an electric mixer, beat the egg whites. You will do that until the egg whites from soft peaks and then add them into the batter by folding in gently.
  2. Heat your cast iron over medium heat. Use 1/4 cup batter for each pancake, making them quite small. Cook until little bubbles start to form, flip and cook until golden brown on the both sides.
  3. Enjoy!
